Meet Chef Roberto Vergara: “Stellar” Meal Prep, Seasoned International Chef
We spoke with Chef Roberto Vergara to learn about his journey from growing up in Acapulco to Chicago personal chef.
Can you tell us about yourself—where you’re from, your background in cooking, and where you live now?
Hi, my name is Roberto Vergara. I live in the Lakeview East neighborhood, and I’m from Acapulco, Mexico. My cooking background includes studying at Kendall College and working in several restaurants. The highlight of my career was working with Carlos Gaytán, a Michelin-starred chef.
What kind of cuisine do you specialize in, and why do you love cooking for people?
I specialize in Italian, Mexican, and American cuisines. I love cooking for people because I enjoy preparing clean, healthy meals for those who are very busy and don’t have time to cook. I want to help them avoid fast food.

Who is the most famous person you've cooked for, and who is your favorite person to cook for?
I’ve cooked for the former Mayor of Chicago, Rahm Emanuel, Congressman Luis Gutiérrez, and actress Lily Santiago. My favorite people to cook for are my grandma, my wife, and all my relatives. I always cook with love for them.
What’s your favorite restaurant in Chicago, and what else should we know about you and your cooking?
My favorite restaurant in Chicago is called Los Gamas. It’s a small spot that serves a blend of Mexican, Puerto Rican, and American cuisines, and they make everything fresh. I’ve had great experiences in my cooking journey, and I’m excited to keep bringing delicious, healthy meals to the table.
